Migas (Spanish Bread Crumbs)

Migas are a very traditional dish in Spain. It used to be a dish prepared by shepherds when they were far from home, so it’s really easy and simple. It consists of stale bread moistened with water and mixed with different ingredients, such as chorizo or pork loin. It is perfect to make good use of stale bread and leftovers. Below, we propose a couple of typical recipes:

Ingredients

    Spanish Bread Crumbs with Pork Loin
  • 1 lb stale bread
  • Water
  • 2 cloves of garlic, peeled and chopped
  • 4 green peppers, chopped
  • 250 g pork loin, cut into pieces
  • 2 tbsp olive oil
  • Salt to taste
  • Spanish Bread Crumbs with Chorizo and Grapes
  • 1 lb stale bread
  • Water
  • 3 cloves of garlic, peeled and chopped
  • 2 tbsp olive oil
  • 60 g/2 oz chorizo sausage
  • 100 g/3.5 oz bacon
  • Salt to taste
  • 250 g/9 oz grapes

Instructions

  1. Spanish Bread Crumbs with Pork Loin
  2. Cut stale bread into small dice and place in a bowl. Moisten the bread by sprinkling water evenly over it. Don’t use too much water, it mustn’t be soaking wet. Allow to sit for 20 minutes.
  3. Peel and chop the garlic. Chop the pepper. Cut the pork loin into pieces. Set aside.
  4. Heat olive oil in a saucepan on medium heat. When hot, stir in the garlic and sauté into until golden brown. Remove the garlic cloves and set aside. Then add the pepper and the pork loin. Sauté until the meat turns brown all over.
  5. Add the bread to the saucepan and stir constantly using a wooden spoon. You have to crumble the bread so that it clumps into small balls. Season with salt and put the garlic back in the saucepan.
  6. Continue cooking until bread is fried and toasty on the outside and soft on the inside. Remove from heat and serve hot.

  11. Add the bread to the saucepan and stir constantly using a wooden spoon. You have to crumble the bread so that it clumps into small balls. Season with salt and put the garlic back in the saucepan.
  12. Continue cooking the bread until fried and toasty on the outside and soft on the inside.
  13. Wash the grapes and sauté in a small frying pan. When bread is ready, gently add the grapes to the saucepan. Remove from heat and serve hot.
